Breakfast Muffins

Ingredients:

1lb breakfast sausage (could be turkey, pork, chicken. I also like to use hot)

1 cup chopped broccoli

1/2 cup diced bell pepper or onion

8 large eggs

1 cup shredded cheddar cheese

1/4 cup heavy whipping cream or milk

1/2 tablespoon avocado oil

1/2 teaspoon baking powder

salt and pepper to taste

Directions:

Preheat oven to 375 degrees. Lightly spray a muffin tin with oil.

Saute sausage in a skillet until no longer pink.

In a mixing bowl, whisk together eggs, milk, oil, and baking powder. Add in chopped broccoli, cooked sausage, diced bell pepper, and cheese. Season with salt and pepper.

Ladle the egg mixture evenly into the prepared muffin tin.

Bake for 20-25 minutes.

*Everything can be mixed together the night before and stored in the fridge.

*I enjoy topping with hot sauce and serving with sliced avocado.
